The Manifesto thus becomes a modus operandi applied and shared by the Consortium members of the Institute, who voluntarily decide to be part of it. Thanks to the continuous progress in breeding techniques and production technologies, the nutritional surveys carried out by the National Research Institute for Food and Nutrition (INRAN, now CREA) and the Stazione Sperimentale Industria Conserve Alimentari di Parma (SSICA) in 2011 have shown the renewed value of Italian cured meats. Extensive scientific evidence documents the role of cured meats in modern nutrition.
