7 are the values on which the “IVSI Manifesto: the charter of our values” of the Istituto Valorizzazione Salumi Italiani (IVSI) is based, a charter that sets out principles, values and characteristics that act as a guideline for the companies that decide to adhere to it and subscribe to it. The Manifesto thus becomes a modus operandi applied and shared by the Consortium members of the Institute, who voluntarily decide to be part of it. Thanks to the continuous progress in breeding techniques and production technologies, the nutritional surveys carried out by the National Research Institute for Food and Nutrition (INRAN, now CREA) and the Stazione Sperimentale Industria Conserve Alimentari di Parma (SSICA) in 2011 have shown the renewed value of Italian cured meats. Extensive scientific evidence documents the role of cured meats in modern nutrition.
